The College has developed programs to build healthier lives while addressing food insecurity and nutrition through education and skills training. As an American Heart Association Heart Health Hub, the Community Kitchen at PGCC Culinary Arts is excited to offer the following free* training.

Recipes

Avocado Shake

Prep time: 2 minutes

Total time: 3 minutes

Servings: 1

Ingredients:

  • 1 large or 2 small avocados
  • 1 cup almond milk
  • 2 heaping tablespoons of Nutella

Directions:

1. Place all ingredients in blender and blend until smooth.

2. Garnish with shaved chocolate or your favorite berry.

Fruit Burrito

Prep time: 5 minutes

Total time 20 minutes

Servings: 1

Ingredients:

  • 1 medium tortilla shell
  • ½ banana
  • 1 strawberry
  • 5 berries of your choice
  • 1 ½ tablespoons of granola
  • Dash of cinnamon
  • 2 tablespoons of your favorite yogurt

Directions:

1. Cut half of a banana into four slices and place in the middle of the burrito in two layered rows.

2. Cut the stem off a strawberry then cut into four slices and place on top of the banana slices.

3. Place five berries of your choice against the fruit pile.

4. Sprinkle granola then cinnamon on top of the pile.

5. Smear yogurt on the tortilla just below the fruit pile.

6. Fold sides of the burrito in and roll slowly and tightly.

7. Heat a none stick pan to medium high.

8. Place burrito seem side down and toast, while moving around, until golden brown.

9. Repeat step 8 on four sides of the burrito.

10. Cut on the bias and serve.

Spinach Stuffed Chicken Breast

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Servings: 4

Ingredients:

4 chicken breasts

1 tbsp olive oil or avocado oil

Mix seasonings in a small bowl.

  • 1 tsp paprika
  • 1 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Mix the following ingredients in a bowl.

  • 4 ounces cream cheese, softened
  • 1/4  cup grated Parmesan
  • 2 tbsp mayonnaise
  • 1 ½ c chopped fresh spinach
  • 1 tsp garlic, minced
  • 1/2 tsp red pepper flakes

Directions:

1. Place oil in a frying pan until it starts to shimmer.

2. Sear chicken on both sides until lightly brown.

3. Cool chicken breasts.

4. Cut a cavity into the top of each chicken breast.

5. Mix spices.

6. Mix stuffing ingredients.

7. Stuff chicken breasts.

8. Sprinkle with 1/4 of the spice mix.

9. Place in preheated 400 degree oven for 22 minutes.

10. Remove from oven and let cool for five minutes.

11. Cut on the bias and fan. Serve.
